Beer wants a narrow and consistent range. A cooler that drifts, or one where temperature varies across the box, causes foaming at the tap.
The opposite problem and just as costly. Beer near freezing pours flat and cloudy, and a frozen keg line is a service stoppage.

Foaming is one of the most common complaints in a bar and one of the most consistently misdiagnosed.
Beer holds dissolved carbon dioxide, and how much it can hold depends on temperature and pressure. Warm it up and the beer can no longer hold that gas in solution, so it comes out — which is exactly what foam is. Even a few degrees of warming between the keg and the faucet is enough to turn a clean pour into a glass of head. This is why draft problems are so often a refrigeration issue rather than a dispensing one.
Refrigeration Services →It is not enough for the keg cooler to be at the right temperature — the beer has to stay there the whole way to the tap. On any run of more than a few feet the line needs active cooling, either glycol or forced air. A failed chiller, a gap in the insulation, or a section of line that has come away from the cooling bundle creates a warm spot, and beer foams at that point regardless of how cold the box is.

Other causes exist on the dispensing side, such as gas pressure or dirty lines, but temperature is where we would look first and where the answer usually is.
Generally around 36 to 38 degrees, though the important part is consistency and that the temperature is maintained the whole way to the tap rather than just in the box. A cooler holding perfectly at 38 with a warm section of trunk line will still pour foam, because the beer warms on its way. That is why we measure at the keg, along the line and at the faucet.
Yes, and it is a genuine and under-recognised problem. Beer approaching freezing pours cloudy and flat and loses its carbonation character, and in the worst case the line or the keg freezes and service stops. A cooler that has drifted cold is as much a fault as one that has drifted warm, and it is usually a control or airflow distribution issue rather than someone setting it wrong.

Line cleaning and the dispensing components such as gas, regulators and faucets are typically handled by a draft service specialist or your distributor. What we will do is establish definitively whether temperature is in range throughout, so you know which conversation to have.

At least twice a year, and ideally scheduled ahead of your busy season rather than during it. Behind a bar the two items that matter most are condenser coil cleaning and door gaskets, because the coils collect residue quickly and the doors cycle far more than kitchen equipment. Both are inexpensive on a schedule and expensive as an emergency.
