Temperature and Draft Beer

Foaming is one of the most common complaints in a bar and one of the most consistently misdiagnosed.

Why warm beer foams

Beer holds dissolved carbon dioxide, and how much it can hold depends on temperature and pressure. Warm it up and the beer can no longer hold that gas in solution, so it comes out — which is exactly what foam is. Even a few degrees of warming between the keg and the faucet is enough to turn a clean pour into a glass of head. This is why draft problems are so often a refrigeration issue rather than a dispensing one.

It is not enough for the keg cooler to be at the right temperature — the beer has to stay there the whole way to the tap. On any run of more than a few feet the line needs active cooling, either glycol or forced air. A failed chiller, a gap in the insulation, or a section of line that has come away from the cooling bundle creates a warm spot, and beer foams at that point regardless of how cold the box is.

Over-cooling is less discussed and just as costly. Beer approaching freezing pours cloudy and flat, loses carbonation character, and in a bad case the line or the keg itself freezes and service stops entirely. A cooler that has drifted cold is as much a fault as one that has drifted warm, and it is often a control or airflow distribution problem rather than a thermostat setting.

Why is my draft beer foaming?

Most often temperature. Beer holds carbon dioxide in solution, and warming it even a few degrees releases that gas — which is what foam is. The warming can be in the cooler itself or at a warm spot along the line to the tap. Other causes exist on the dispensing side, such as gas pressure or dirty lines, but temperature is where we would look first and where the answer usually is.

Generally around 36 to 38 degrees, though the important part is consistency and that the temperature is maintained the whole way to the tap rather than just in the box. A cooler holding perfectly at 38 with a warm section of trunk line will still pour foam, because the beer warms on its way. That is why we measure at the keg, along the line and at the faucet.

Yes, and it is a genuine and under-recognised problem.
