If Your Walk-In Is Losing Temperature

Four things worth doing while a technician is on the way. They can be worth more than the repair.

Keep the door shut

It sounds trivially obvious and it is the single most valuable thing you can do. Every time the door opens, warm humid East Texas air replaces cold air, and a box that is already struggling loses ground it cannot recover. Decide what you need, get it in one trip, and then leave it closed. A freezer that is kept shut holds usable temperature for a surprisingly long time.

Take thirty seconds to look at the condenser coil, usually on the outside of the unit or on the roof. If it is packed with dust, grease or pollen — and in East Texas it very often is — that alone can be the whole problem. It also tells us something useful before we arrive. Do not attempt to clean it while the unit is running.

My walk-in is not holding temperature. What should I check first?

Three things, in order. Look at the condenser coil — if it is packed with dust or grease, that alone can be the whole problem. Check the door gasket by looking for daylight around the seal when it is closed. And make sure product has not been stacked against the evaporator or in front of the fans, which is more common than you would think. Then call us, and keep the door shut in the meantime.

Immediately, at any hour. We treat these as genuine emergencies rather than putting them in a queue, because unlike a comfort cooling call the cost is running from the moment it failed. When you call we will also give you practical advice for the interim — keeping the door shut, and moving the highest-value product if you have somewhere to put it.

Almost always one of two things. Either the defrost system is not working properly, so frost accumulates on the coil instead of being cleared each cycle; or warm humid air is getting in through a failing door gasket or a door that is not closing fully, and that moisture freezes on the first cold surface it meets. In East Texas humidity the second one causes a lot of what we see.

At least twice a year, and quarterly for high-use equipment in a busy kitchen. The two items that matter most are condenser coil cleaning and gasket inspection, because those are behind the majority of failures. The arithmetic strongly favours it here — a scheduled visit costs a fraction of one emergency call with product loss attached.

It depends entirely on how long it was out of range and how far. That is why we ask you to note the temperature and the time when you first noticed, and why moving high-value product early matters so much. We are not food safety inspectors and will not make that call for you, but we will give you accurate temperature information to make it with.

Usually the box itself outlasts several refrigeration systems — panels and insulation last a long time. The question is normally about the condensing unit and evaporator rather than the walk-in. Replacing the refrigeration on a sound box is common and considerably cheaper than a full replacement. We will tell you which part of it is actually at the end of its life.
